Transcript: How to Cook Spinach
Hi, I’m Rachel Edelman for About.com Food. Today I’m going to show you 3 different ways to cook fresh spinach.
First, you need to wash your spinach. At the store, look for spinach with lively green leaves without brown or yellow spots. Even if you are using pre-washed spinach, you should rinse it again. Remove any discolored or wilted leaves.
Cut off as much of the stems as you can. You can chop spinach before or after cooking, or you can have it whole. Take a batch of leaves and bunch them together. Take your knife and slice every quarter inch. When you get to the end, run through again with your knife a few more times.
Boil 1 to 2 inches of water, put on your steamer, and add the spinach and cover. It will seem like a lot of leaves, but they will shrink down when cooked.
Another great way to cook spinach is to sauté it or fry it in a pan for about 2 minutes. You can cook it just washed, or you can season it. Today I’ll use oil, garlic, and some red pepper flakes. I’m using two cups of spinach and you’ll see how it cooks down. Continuously fold over the leaves so the uncooked leaves get a turn to be at the bottom of the pan. So here’s two cups of fresh spinach cooked.
You can also microwave your spinach, in a microwave safe covered dish with some water for about one minute per cup. Microwaving keeps most of its nutrients.
If you are using frozen spinach for any of these cooking methods, be sure to drain it before adding it to your dish. Cooked spinach is a great vegetable to add to a variety of dishes.
